Kimchi Got the Credit. The Rest of the Kitchen Kept Working.
At some point in the last decade, kimchi became the face of Korean fermentation for the international food world. It earned the coverage, the cookbook chapters, the probiotic health claims, the placement in supermarket refrigerators from Whole Foods to Waitrose. None of that recognition was undeserved — kimchi is extraordinary and the fermentation science behind it is genuinely impressive. But kimchi is one product. Korea's fermentation tradition is a system that has been running, without interruption, for over two thousand years. The jars on the back porch do not contain only kimchi. They contain doenjang, ganjang, gochujang, sikhye, and in many households, a quiet batch of makgeolli maturing in the dark. The West found the ambassador. It has not yet found the country the ambassador represents.

Among global culinary traditions, East Asian countries — particularly Korea — are renowned for their fermented foods. Key examples include fermented vegetables (kimchi), soy sauce (ganjang), soybean paste (doenjang), red pepper paste (gochujang), fermented salted fish (jeotgal), and traditional beverages like makgeolli and sikhye. Koreans have traditionally followed a fermented-foods diet for at least five thousand years, and fermented-product footprints are now evolving beyond boundaries. The wellness industry discovered probiotics in the early 2010s and kombucha a few years later. Korea had categorized, refined, and built entire culinary architectures around microbial fermentation before most Western cuisines had developed a written recipe tradition. The difference is that Korea never stopped to brand it as wellness. It was simply food.
The Three Jang: Doenjang, Ganjang, Gochujang

The foundation of Korean fermentation is not a single product but a trio of condiments called jang — fermented soybean-based pastes and sauces that function as the flavor backbone of virtually every Korean dish. Doenjang and ganjang have the longest history, with origins dating back to Gojoseon times around 2333 BC. It is believed that as soybean cultivation began, people created a thick blended sauce called dujang — a mixture of early forms of doenjang and ganjang. By the Three Kingdoms period from 57 BC to 668 AD, the technology to separate soy sauce from soybean paste had advanced, leading to the development of distinct fermented sauces.
Doenjang and ganjang are, in the most literal sense, twins. Both begin from the same starting point: soybeans are boiled, mashed, and shaped into meju — fermented soybean blocks — which are then floated in salty brine and left to ferment for months in onggi earthenware jars. During this time, the beneficial nutrients from the meju seep into the brine water, creating a dark, deeply savory liquid that becomes ganjang. The remaining solids — the meju chunks transformed by months of fermentation — become doenjang. Two products from one process, each carrying a distinct personality: ganjang clear and liquid, deeply umami, used in broths and marinades; doenjang thick and pungent, earthy and complex, used as the base for stews and dipping sauces.
The flavor of traditionally fermented doenjang is difficult to place in Western flavor vocabulary because it does not closely resemble anything in that vocabulary. Traditional doenjang has a unique and strong flavor — earthy, deeply savory, with a mild bitterness that signals fermentation rather than spoilage. It is reported to have antioxidant, anticancer, estrogenic, and immunomodulatory properties. The presence of isoflavones in doenjang is responsible for these functional properties, with isoflavone content increasing significantly through the fermentation process: total flavonoid content in finished doenjang has been measured at ten times that found in raw soybeans. Comparing it to miso is the most common shortcut, and it is not wrong, but it understates the intensity — doenjang is more pungent, more aged, more willing to announce itself.
Ganjang, meanwhile, is not simply Korean soy sauce. Traditional Korean ganjang (joseon ganjang) is thinner, saltier, and more complex than Japanese-style soy sauce. It is actually produced as a byproduct of doenjang-making — the liquid that separates out during fermentation. Today most Korean kitchens use both traditional and commercial ganjang for different purposes: joseon ganjang for soups and light seasoning where clarity and saltiness are needed, yangjo ganjang (brewed soy sauce) for marinades and dressings where a rounder umami is preferred. The distinction matters because each type behaves differently in cooking, and understanding the difference is the beginning of understanding how Korean flavor is actually built.
Gochujang completes the trio, bringing the fermentation logic into the realm of heat and sweetness. Unlike the soybean-only base of doenjang and ganjang, gochujang adds red chili powder and glutinous rice to the fermented soybean foundation, creating a paste that is simultaneously spicy, sweet, and deeply savory — and that requires months of fermentation to achieve its characteristic depth. The three jang together form what Korean cooks have described for generations as the foundation of the entire cuisine: with these three, there is no Korean dish you cannot make.
Jeotgal: The Fermented Seafood the West Has Not Found Yet
Beyond the soybean trio, Korean fermentation extends into territory that most international food conversations have not yet reached. Jeotgal — salted and fermented seafood — is the category that lives below the global radar despite being fundamental to Korean table culture. Jeotgal includes fermented salted fish, shellfish, and roe, and it is one of the four major fermented food categories in Korean cuisine alongside kimchi, jang, and vinegar-based ferments. In Korean food culture, jeotgal functions both as an ingredient — particularly in kimchi-making, where saeujeot (salted fermented shrimp) is a foundational flavoring — and as a standalone banchan side dish.
Ganjang gejang — soy-marinated raw crab — is the form of jeotgal that has come closest to international recognition, primarily through Korean restaurants that have introduced it to adventurous diners outside Korea. The crab is marinated in a soy sauce brine infused with garlic, ginger, and aromatics, and consumed raw — the brine curing rather than cooking, producing a texture that is nothing like cooked seafood and a flavor so intensely savory that Koreans nickname it the "rice thief." It is not a dish designed for timid entry into Korean fermentation. It is, however, an accurate demonstration of where that fermentation tradition can go when it moves beyond paste and sauce and into protein.
Makgeolli: The Probiotic Beverage That Predates Kombucha by Millennia

The Western world's recent enthusiasm for kombucha, kefir, and fermented beverages rests on the discovery that live-culture drinks can support gut health in measurable ways. Korea's answer to this category is makgeolli — and it has been the answer since the Three Kingdoms era.
Makgeolli is a traditional Korean fermented rice wine made from just three ingredients: rice, water, and nuruk — a traditional fermentation starter made from wheat or rice that allows various natural microorganisms including mold, yeast, and lactic acid bacteria to grow. The result is a cloudy, off-white beverage with a naturally carbonated quality from ongoing fermentation, mildly sweet, lightly sour, faintly bitter, and gently fizzy all at once. It is refreshing in the way that kombucha or kefir is refreshing, with a probiotic quality that comes from live fermentation cultures still active in the bottle.
With a low alcohol content of around 6 percent, makgeolli is believed to have probiotic properties, containing 100 to 500 times more Lactobacillus bacteria than yogurt, as well as antioxidant, anti-inflammatory, anti-aging, and anti-cancer properties. It is also high in vitamin B, amino acids, and dietary fiber. The caveat matters: pasteurized, commercially produced makgeolli with added preservatives does not retain these probiotic benefits. For the health angle, unpasteurized saeng makgeolli from craft producers is the version to seek out — and it also tastes considerably better.
Makgeolli's revival is already happening. The global makgeolli market was estimated at USD 559.3 million in 2024 and is expected to grow at a CAGR of 7.6 percent from 2025 to 2030, driven by increasing global interest in Korean cuisine and culture, and by the growing trend toward healthier alcoholic beverages. North America captured a revenue share of over 23.5 percent in 2023, with craft makgeolli from producers like Hurangi and Okdam beginning to appear in specialty liquor stores and Korean restaurants in New York, Los Angeles, London, and Sydney. The cultural positioning of makgeolli maps naturally onto the same consumer values that made kombucha a multi-billion dollar category — natural, fermented, low-ABV, probiotic — with the added dimension of a two-thousand-year history and a flavor profile that kombucha cannot replicate.
The vessel matters too. Makgeolli is rarely served in glass. Instead, it is poured into small brass or ceramic bowls — a tradition that changes how the drink feels, how much you consume in each sip, and how naturally it becomes part of a communal table rather than an individual purchase. The bowl slows you down. It invites sharing. It connects the drink to the bindaetteok pancake beside it and the conversation around the table, which is where makgeolli has always lived.
Sikhye: The Digestive Drink That Arrived Before the Concept of Digestifs
Sikhye occupies a different position in the Korean fermentation landscape — lighter, sweeter, and non-alcoholic, it functions as a dessert beverage and digestive aid with a history reaching back to the Three Kingdoms period. Sikhye is made by pouring malt water onto cooked rice and allowing it to steep at around 62 degrees Celsius until grains of rice float to the surface, signaling that the malt enzymes have broken down the rice starches into sugars. The resulting drink is moderately sweet with a specific barley-malt flavor, containing the floating rice grains that have been a distinctive feature of the drink across its entire history.
Sikhye is believed to aid digestion as it contains dietary fiber and antioxidants, and it was regularly served to royalty after meals to help with digestion. The modern equivalent in Western dining is the digestif: something served after a meal, primarily to settle the stomach rather than to extend the alcohol consumption. Korea arrived at this concept not through distillation but through fermented grain — a sweet, gentle, functional drink that marks the meal as finished. In Korean homes today, sikhye appears at holiday tables and is sold in canned form at every convenience store. In Korean restaurants, it arrives at the end of a meal unbidden, in the same way that a good Italian restaurant might send out a small glass of limoncello. The gesture is the same. The ingredient has centuries more history behind it.
What Korea Knew That the Wellness Industry Is Now Learning
The current Western enthusiasm for fermented foods is framed almost entirely in the language of gut microbiome research, probiotic science, and functional nutrition. Kombucha is sold as gut health. Kefir is sold as digestive support. Fermented vegetables appear on restaurant menus with callouts to live cultures and beneficial bacteria. All of this is accurate, and the science behind it is sound. But it represents the West arriving at a destination that Korean food culture reached several thousand years ago through intuition, tradition, and the practical necessity of feeding people through cold winters without refrigeration.
Fermenting microbes actively break down the bulky, heavy proteins of soybeans into tiny, easily digestible amino acids that the body can effortlessly absorb. Through the long waiting period of fermentation, beneficial gut-friendly bacteria and powerful antioxidants multiply, creating what the research now confirms: compounds helpful in reducing inflammation, preventing obesity, and stabilizing blood sugar levels. Korean grandmothers did not know the mechanism. They knew the outcome: the people who ate doenjang jjigae every morning were healthier than those who did not, and that was sufficient evidence across generations.
The gap between what Korea has always known and what the global food market is now discovering is narrowing, but it has not closed. Kimchi crossed over. Gochujang is crossing over now. Doenjang, ganjang, makgeolli, and sikhye are at the threshold — recognizable to anyone who has spent time in Korean restaurants or with Korean food culture, still largely invisible to the mainstream consumer who knows what kombucha is but has never opened a jar of traditional Korean soybean paste. The flavor at the bottom of that jar — earthy, complex, deeply alive with centuries of accumulated fermentation knowledge — is worth the discovery.
